Let me share with you the most delicious, simple, and flavorful Greek lentil salad. You can easily prepare this recipe for weekday lunches.
It uses common ingredients from Greek salads like feta, red pepper, cucumber, and onions, but I’ve added lentils to make it more filling.
Because they add protein to any meal, lentils are an excellent vegetarian and vegan alternative. My Greek upbringing and my mother’s habit of making the best Greek salads when I was a kid are definitely the sources of inspiration for this recipe.

Lentils: This lentil salad is extremely filling because of the lentils. Lentils have so many uses and are full of nutrients.
They are an excellent source of plant-based protein and support a healthy heart and digestive system.
I used lentils from Bob’s Red Mill for this recipe. For this salad, I chose their green lentils because they are the most flavorful and slightly spicy of the lentils.
Greek Salad Dressing: I have a recipe for a Greek salad dressing that is very easy to make. It only requires five ingredients and five minutes to prepare. You’ll never buy anything at a store again.
How to make lentil salad?
- Cook the lentils according to the instructions on the bag from Bob’s Red Mill or to your preferred degree of doneness.
2. Lentils should be drained and rinsed in cold water. Place aside.
3. Make the dressing for the Greek Salad. Place aside.
4. Slice the cucumber, red pepper, tomatoes, and red onion into pea-sized pieces.
5. Chop the basil, dill, chives, and mint finely.
6. In a large bowl, combine the chopped herbs, diced vegetables, and cooled lentils.
7. Toss the ingredients together with the dressing before serving.
8. Season to your liking, and ENJOY.
